Basically, when choosing a processing method for Nepali coffee, we first need to understand the cherry from its origin and variety to its ripeness, density, and overall quality. Only then can we decide which process will best express its potential. For example, higher-altitude coffees may work beautifully with natural, lightly fermented, washed, or honey processes, while lower-elevation coffees can sometimes benefit from controlled fermentation to improve clarity and complexity. Coffee process should follow the cherry not the other way around.
